Is there a way a customer can edit their submission prior to me adding the edit link? I have added the link into my automatic emails moving forward, but two clients had already submitted their forms and are now needing to edit their forms.

You can create another Autoresponder email with the edit submission link and send it as soon as the user submits the form. So, the user can edit the submission before you sent the automatic emails.

Can you walk me through that?  I've tried to "edit" their submission, then hit submit but they did not receive a link.

You just need the URL (https://www.jotform.com/edit/) and the (submission ID) to manually edit the submission. The submission ID can be found on the submission page.

You may share the complete link to your two clients without the {edit link}.

Please give it a try and let us know if you have further questions.
