For instance, Monday-Friday 9am-5pm? Not available on Sat or Sunday?

You can achieve this using Conditions feature on the form.
Please refer also to our user guide : Enable or Disable a Form Based on Time Using Conditions

Ok...sorry. Can I make the form only be able to accept orders during certain times...but be available all the time?
So...the form can be up at anytime...but the user will only have certain times they can choose to order which are hours the business is open?
So the form is always there, but they can only order for instance Mon-Friday 8am-5pm?

Yes this is very much possible as well. You can add the Date Picker field on the form and use Condition logic to determine the current date/time. So if it is not Mon-Fri 8am-5pm, certain aspect of the form will be disabled (preventing order).
I will make a demo form with this idea. I will update you shortly

By the way, for the purpose of the demo Current Date and Current Time fields were shown so you can simulate the date/time.
You can hide the fields on the actual live form.
