I have some fields, text and images in my form that hide according to conditional logic I set, but then when I get the attached PDFs in the email, just the hidden/unaswered fields disappear but the text/images that are supossed to be hidden as well are still visible, and it's just wasted space in the document. Anyway to go around this other than edit the PDF on a case-to-case basis?

I'm afraid that this is not currently possible as the conditions only affect the web form, but they do not affect the PDF report.
As a workaround, you may set up different documents for each case and set up different email notifications with each report attached accordingly, then use conditions to send the corresponding email. I've got 79 conditions in my form so there's no way I'm doing 79 different PDF formats for each case. Please open as a feature request, to add an option to "Hide headers/text/images hidden in the web form" just below the option that allows to hide unanswered fields.
