I am just wondering if you can do a number of weeks calculation between two dates for accommodation purposes, especially if you are charging on a weekly basis?

Yes, that's absolutely possible. 

1) First you need to add Dates Difference widget, that calculates the number of days between selected dates:

2) Then add Form Calculation widget and configure it:

3) You need to define the following calculations inside Form Calculation widget:

The idea is to add the DATES DIFFERENCE WIDGET > divide it by 7 > then append the word "weeks" at the end if necessary. It's also recommended to set the field as READ ONLY.
