How many API keys can I have associated within my WordPress site?

Multiple people are contributing various forms to our website. Each of these people have their own JotForm account. Can we embed forms from other accounts to the site? And do we need to have multiple API keys to make this work?

I am not sure if I have understood your question correctly. 

You can embed any number of forms in your wordpress site. These forms can be associated with different JotForm account, that is not going to create an issue. You just need the individual form embed code.
