We've set conditions so that if you register for more than one person to attend the conference, then extra name fields will show.
This was all working but we made some edits to the form, and we've broken it!
Any ideas what we've done wrong? If not, I'll delete the conditions and start again.

I checked on this and I saw that it was partly working. I'm convinced that this became the problem you mentioned due to all of the modifications you've made so it has created empty rules due to several fields I could see were marked as deleted. I believe that this has created a conditional conflict on your form that is partly breaking it since even after removing them it is not working correctly.
So because of that I think at this point your best bet would be to delete and rebuild your conditions on your form from the ground up which should fix it.
I also meant to point out that instead of doing it on the same form it would be a good idea to make a clone of it and try there to see if it makes any difference. This way you don't lose anything on your original form and have it as a backup.
