Las notificaciones de recepción de formularios nos han funcionado siempre bien, pero hoy hemos dejado de recibirlas y en configuracion está todo correcto.

I checked your form and your notifications is indeed setup correctly. So, I checked our e-mails log to see if the notifications were still being sent and it appears that they are:
It is possible that due to the frequency of the notifications or some other circumstances, the e-mails are now being filtered by your email provider. The first thing to do would be to check your spam/junk e-mail folder. If there are not present, you can try changing the sender email to "email@example.com". This is our other default e-mail address.
