How can I edit a template without having to delete everything first?

I am using a template for selling merchandise. It is the Arsenal Sports template. I can edit everything, but the most important information and the reason why I want to use the form, is for the merchandise set-up. I can't edit any of the information that is the most important and I am having to start from scratch.

I am selling a boot in 4 different colors. Available in 9 sizes. People may want to purchase multiple sizes and multiple colors. I want to be able to have the size and then the quantity box underneath.  Any suggestions or help would be appreciated.

You should be able to edit the product items from that specific template. After you use it, click on the payment field and run the wizard by clicking the "wand" icon:

Next would be to click "Next" button until you'll see the product items. Then clicking to each will reveal the item options beneath:
