If I created the account with my email, why is my email the only one I can send to?

You can actually use different email recipient in your form or even use multiple recipient emails. 

If you want to test your form recipients, make sure make an actual submissions with your form. Using the test email button in the notifications wizard will only send a test submission in your account email address.
