You can update your account email in your JotForm My Account Profile page while logged in to your account at http://www.jotform.com/login

I have tried this changed back and forth between 2 different email addresses and neither one gets the email of the jotform but I do get the change email address notifications. ??

If I understood you correctly you want to change Email address on which you are getting submissions when user submits your form.
You can do that inside of Email Notification by changing Recipient Email address.
