I want to create a check list and have students choose only one item in the list. If they select a different item, the initial item should become unchecked automatically.

Yes. It is possible to limit the users to select minimum and maximum options from the check list from the field properties.
The properties window can be accessed by clicking on settings icon of the field and then Show Properties.
Now. choose the correct option as per your requirement in Maximum Selections from the properties window.
However, it displays an error when second option is checked. The previous option to be unchecked manually. If you want the previous option checked to be unchecked upon choosing another one, you may consider using Radio button instead of checkboxes that allows to choose only one option.
