At the moment I and my subuser verify that submissions are no longer editable.
Are we doing something wrong or what?

I've checked your form submissions and it seems that the submissions are editable without any issue. Could you please check this once again and let us know if the issue still persists? Please make sure that the URL is now changed to http://eu.jotform.com/ since your accounts are now moved to EU server.

actually the problem seems to persist
clip before and after modify button pression, simply data disappear ..
What I'm doing wrong ... I feel stupid :-)

I've sent a test submission to check the editing of submission and I was able to edit the submission without any issue.
I submitted the form with JotForm Test as the customer name and edited the field to Test JotForm which worked at my end. Please see the screenshots below :
Received Autoresponse with original data entered
After interchanging first and last names, the name changed in the submissions view.
Could you please check with another browser to see if that works for you? Also, please try logging in to your account on a Private/incognito window.
