I am trying to help my coleague encryt her files, she has chosen to encrypt her files, and downloaded the key, how does she know that her forms are no encrypted

You can check if the form is encrypted or not by checking the option Encrypt Form Data in Form Preferences.
When you try to view the submissions of an encrypted form after you are having a fresh login to your JotForm account, it should be asking for the key to upload. If the key is not uploaded the submissions will be displayed in the encrypted form.
