I've created a form but I cannot figure out what option to select that allows the user to un-select a checkbox if they check it by accident. What I would like is just remove the checkbox all together and only allow them to enter in quantities.

Upon checking your form, I see that your products have check boxes and quantities on it. By default, the check boxes are indications that the product is selected, they can easily un-check it by clicking the check box button again, however it seems like it is not that case here. Here's a screencast:
Below, I'm unable to deselect the product item unless I entered a blank value on the quantity field or re-enter "0" on it.
This seem to happen because you have set the "Required" option on the specific products.
Notice that product 4 can be selected and deselected by clicking the check box button, this is because it is not set to required.
I presume products 1, 2 and 3 are not really required? If that is the case, please disable the "Required" option in the specific products. You can just set the general "Require" option.
