Hello,
I have just done something very foolish and horrible.
I meant to delete one single double-submission, and I ended up deleting ALL my submissions dating back to October last year.
Is there ANYTHING you can do to bring them back?

I'm sorry to say, unfortunately, when you delete a submission, it is permanent and irreversible. The data is owned by the user, with that, we do not create copies of it once deleted. It is remove or deleted in our servers.
There are messages showing before deleting submissions, if you use the "Delete All submissions", it will display this message:
When deleting submissions one by one, there's also another message that will pop-up:
If you have setup a notification to send a copy of the submission in your email, you can use that as a reference.
Another way is to check your form's email history, you can also check the submission data from there. Here's a guide that you can follow: http://www.jotform.com/help/293-How-to-view-all-your-form-Email-History
