I would like to add info (using Text) in emails. How do I do this?

You can do that by adding it manually into your email body by going to your Email in JotForm form builder:
You click Edit on your Email notifier and copy your text inside in the body of the Email:
So when you add that text it will go with your email, otherwise it will not, since it is field without value so you can not link it to email body.
Be mindful that this will work only if you don't change that text with each submission.
