I am not sure if I fully understood your question, but you seem to be asking about setting a certain date in one field, based on what is entered or selected in another field.
Yes, this is possible by using the conditional logic on your form, with update / calculate field rules.
I see that you have already set up such rules on your form named CURSOS COMPLETOSvf, where entering a date in field Fecha / hora de Inicio automatically fills the date in field Días a reportar.

what I mean is that, if pressing the option: if marked in red circle, you can schedule the date appears when (date) is pressed that option. Since I have scheduled the option: if, if that option is pressed an email with the form data is sent, then the idea is to have a record of the date to which enevio the mail.

If I understand correctly, you want to set a condition so that when the "Enviar a Csc" is equal to "Si", you want to show a date field? If so, then you can use the Show/Hide condition to show that date field.
