Also, i want customers to be able to upload pics to create an image gallery within the form which they can come back & view themselves. Can this be done?

Unfortunately, we do not have this feature at the moment. There is no widget that can help you with this. A workaround for this is to create an upload form where your user uploads images. Then, handle the uploaded images with some custom gallery application or use some existing solution like Coppermine Photo Gallery.
