I need to set up a form that will have many products and the client will select only one product.  The product will not be added together.

Once you add the payment integration to your form and fill the data of your account, you will be redirected to a window where you will select what to do with your payment form, if you choose the option to Sell Products then you will be asked if you want to allow your users to select more than one product or only one. 

Products will be shown on your form on radio buttons, the HTML field that allows only to select one option from multiple.
