Whenever I add a payment option, jotform does display the option I just added, however, when I go back to add an additional payment option I have to start all the way over. Does jotform not save my original option? It's so time consuming and frustrating because I have to start all the way over. Is there anything you all can do about this?

We only allow for one payment type per form. It is not currently possible to have multiple payment types in a single form. That is to say, you cannot allow for payment through both Stripe and PayPal in the same form. This also means you cannot add 2 payment fields of the same type.
If you need multiple sections of products, I would recommend setting your products up outside of the payment field as regular fields. You can then assign those options calculation values:
Total the products from all sections up in a calculation field:
And pass that total to your payment field:
