My Salesforce account has been authenticated and the fields are matched up, but when I fill out the form it doesn't load anything into my Salesforce account.

Please try reintegrating the Salesforce with Jotform and re-mapping the fields. Also, make sure that all of your fields are mapped properly to the Salesforce fields since integration will not work if all the fields do not match exactly.
