It looks as though jotform apps will permit us to offer conditional methods of payment - e.g. bank transfer, paypal, cash, subsequent to completing the entry form?

Did you mean that you wanted to use one of our Payment Integrations with some Conditional Logic? Or what exactly did you mean by that?

My idea was to ask a question about how a client would like to pay, and then use conditional logic to provide the answer - i.e. open the paypal integration, take to them to a text box with our bank details for an EFT, or a text box with details of how to make a cash or cheque payment?

Yes it is possible to achieve your requirement. You can add "PayPal" payment question in your form and then take advantage of our conditional logic feature to show / hide the payment field based on the user's choice of payment.
