I'm having trouble setting up email responses to the person that submitted my form. I've set up the autoresponder email using the verification email set up but those coworkers have not been receiving confirmation emails when they submit my form.

Could you try using the JotForm default email address for the auto-responder and see if that works?
You may also consider setting up SMTP email address to use the custom email sender name for the auto-responder. Please refer to the guide below that can help you with setting up SMTP for you JotForm.
