The regular Date Picker Field should work based on your description. Users can select the dates on this field regardless if it was already picked or selected by someone else.

The Date Reservation Widget would have worked for your needs but you specifically mentioned that you need other subsequent users to be able to pick/select previously reserved dates.
The only other widget that I can think of is the Configurable List Widget. This widget allows you to add a Date Field and your users have the freedom to add as many dates as they want.
