Hi
I'm testing the page and form now - when I embed the entire source code into the site page on Wordpress, does this mean the availability won't be updated live...? I can see the submissions coming in but when I refresh the form page is still says when is available in time slots I've already chosen.

Yes, the availability won't be updated on the live form. When the form is embedded with the full source code changes that are done on the form inside of the form builder will not be updated unless you re-embed the form with the new code.
Instead of embedding the form with the full source code, I would suggest you to check this guide and embed the form with one of the options that are provided there:

Or you can embed the form with the iFrame code:

Thank you ... I've tested the form and the submissions appear in the backend but when I refresh the page and go to the form again, the time available is still 1 available... I've submitted the form several times but 1 available is always there even if I've selected and submitted that time slot previously.
I think I must be missing something in the settings bit I can't see what it is...

I was able to replicate the issue when I tested your form, but I was not able to replicate it on my form.
To resolve this issue you will have to update all widgets on your form.
