I used to be able set my form to charge my customer yearly, not just 1 payment... how do I do that again????????????

May we know what payment integration you are using? Can you please provide us the form you are working on so that we can investigate?
To set up a recurring payment option on your form, you need to select Sell Subscriptions as the Payment type and then you will be able to create subscriptions where you can set the subscription period.
