Because I cannot embed the form directly into a MailChimp email blast, is there a way to have users simply click "confirm" or "submit" without filling in any fields? I would need JotForm to capture their e-mail address without them having to re-type it into the form.

That is not possible, the users need to enter their information, unless you already know it, you can pre-fill it via URL parameters: https://www.jotform.com/help/71-Prepopulating-Fields-to-Your-JotForm-via-URL-Parameters

We also have a widget called Spreadsheet to Form. This widget allows you to upload a spreadsheet to your form and use the values you have in the spreadsheet to pre-populate your form.
