I have a question per page form and I want to capture each question, regardless if they complete the form. I.e. if they complete question one and press 'next' I want it to save the answer to that question, even if they give up on the rest of the form after that.
I've read the only way to do this is to create a form for each question. Is this true?
Possible any easier way?

Please note that you can save the partially completed form for later by following this guide: https://www.jotform.com/help/97-How-to-Save-Forms-and-Continue-Later
The partially completed form will be saved after clicking on the "Next" button of each page. Please let us know if this works to your satisfaction.

from what I read then, it needs to be a 'All questions in one page' form and then I use page breaks. I can't use a question per page layout - is that correct?

You can also enable Save and Continue Later feature in card forms (single question per page). Please follow this guide: Setting-up-the-Continue-Forms-Later-Feature-in-Card-Forms
