How can i keep my template not being cut off for my notification email?

- customer email is functional but without product codes

- notification email is with product codes which is the only difference.

Please note that emails cannot contain more than 65.536 characters in their source code.  Whatever is beyond the limit will get truncated.

You will have to use shorter email notification, containing only those fields that you would like to receive through email so that your email is less in size than the aforementioned limit.

You can also enable the PDF attachment option in the email notification, Advanced tab. Based on the fields that have been answered, they can be generated into the PDF.
