To clarify, are you using the Outlook email app? If so, you can navigate to the app option settings and you need to disable the automatic download attachment in the app trust center settings.
Here is a sample email with the signature field shown:

My issue is that this might fix when I get the form, what about my client and the auto responder? People who have outlook and get the asuto responder sent to them will have same issues...

Thank you for your message.
Most email clients block remote content by default, which is outside our scope I'm afraid. So it's best to minimize, if not avoid, remote content on emails.
Or, you can attach the submission data as PDF instead. The following guide shows how to do it on Email Notifications, but it should work on Autoresponder as well.
