Also, is it possible to customize the payment section in a way that gives choices of how much to donate and a space to write in details. For example, if we are suggesting a donation, and giving credit card and paypal options for payment, can we have a list of diff amounts of $ that can be donated with details too "$100 - send food to a family for a week" that the person filling out the form can choose from. Or do they have to just pick a payment option and then type in the amount they want to give.

I would suggest manually creating your product list using the multiple choice field and assigning values to them.
