The email address used to sync over to stripe.com such that when you pulled up a customer, it would show their name and email alongside their stored credit card.
About 30 days ago, this behavior changed. Jotform doesn't seem to be synching the email address to stripe. I can confirm because the emails we get confirming a submission no longer have the email address at the bottom. The ==Payer Info== section used to also contain Email.

Thanks for providing us with the details.
Unfortunately, we didn't get any details regarding this change from our developers. But I believe something has been changed.
I believe now you can try a workaround and receive an email via Email Alerts:
