What do you mean by personalize it, you can switch the order of columns by moving them around, but I'm not certain what personalization you're attempting to get.

I would like to customize the way data is shown to me when I export tables so excel, like change letter cases, spacing , what to show/ what not to. It will cut my manual effort to refine data in a way i want by 99%.

The changes made in your Jotform tables will reflect in your downloaded Excel file. For example, if you'll hide the first column in your Jotform tables, then the Excel file will not show this column too.

Is there any way to edit the text shown in the columns, for example, i want some entries to show up only in caps as requirement, and i don't need some text that shows up on the excel cell.

We suggest it best to download the submissions from the table into an Excel file, then do the customizations in the downloaded file. I believe the requirements you mentioned can be done in Excel.

The functions inside the Submission Table is limited vs the functions you can use in Excel. For example, making data in ALL CAPS cannot done in the table, but it's easy when you use Excel.
