How do I choose a Shared Google Drive as my root folder?

Thanks for reaching out to Jotform Support. I'm afraid Google Drive Integration will use your personal drive and there's no option to use a Shared Drive. An alternative is to use a third-party application such as Zapier to integrate the form to a Shared Drive.
