I'm more than happy to have the email originate from yourselves/amazonses.com as appropriate, but I really would like to put my name and email address on it as the sender to be honest.
Is it not possible for this to work in the same way as you'd set up an autoresponder? ie: the email is handled by Jotform, but it turns up in the users inbox showing the Senders name and email address?

To confirm, you would when a confirmation email is sent to the person filling out the form, that the email would be sent in your name?
If so here are the steps to do so:
1. Go to Email Alerts in your form builder:
2. Select Add New Email
3. Then select Auto-Responder and click next
It would take you to this page.
4. You would then type in your name and select your email address.
5. You would set the field for the recipient email.

Are you referring to the notification email or autoresponder email?
To my understanding, you want to change the notification sender's email and name. With this, you can easily change it from the notification settings. Check this guide for more details: https://www.jotform.com/help/238-How-to-Add-a-Custom-Sender-Address-to-an-Email-Alert
You can also use Mandrill https://www.jotform.com/help/236-How-to-use-Mandrill-to-Send-Emails-From-Your-Own-Email-Address
If you want custom sender names, simply add a hidden field to your form. Insert a default value and set it as your sender's name.
Then select the sender's name field on the email notification settings.

Thanks for the responses.
I was actually asking this question in the context of your email validator widget :).
By default, the email this widget sends has the sender name set to "Jotform" and the email address set to "<email@example.com>." Is it possible to change these to my sender name and email address?
Also, Gmail show the email as being "mailed-by" amazonses.com and "signed-by" amazonses.com. Is it possible to change the "signed-by" address to my email address?

Thanks for the clarification. Unfortunately, that's not possible with E-mail Validator Widget. Wit its current settings, you can't change its sender name and email. However, I am forwarding this as a feature request. Hopefully this will be considered in the future as part of the enhancement on this widget but I could not guarantee you with anything. Rest assured any updates will be posted via this thread.

Ah that's a shame.
Can Jotform maybe provide a workaround or something with a similar result?
ie:) a way of generating a random link which I can then send via an autoresponder maybe?
Mandrill was mentioned earlier. I'm aware that's provided by Mailchimp. Being one of the integrations Jotform offer, is it possible to maybe achieve this by integrating my forms with Mailchimp?
Or maybe there's a Jotform app you could recommend?

Unfortunately, I don't think both Mandrill and Mailchimp can do the validations. There's no settings in the Email Validator widget to add your own sender details. I think we have to wait for our developers to update this.
