I'm confused as to who is generating the email address (firstname.lastname@example.org) in the attached. is it from yourselves or from the dropbox account? it's an old one and I want to change it.

I think that is because your Sender Email setting is empty. Our system used the old one which the email from your screenshot. This is your current settings:
