I have created a email response to go to the person who fills out my form and I noticed it has your logo and says it came via amazonses.com
I'm not too concerned with changing the via amazonses.com but I would like to have my logo appear. Please see the attached image and advise.

Unfortunately this is not possible to change, because you are receiving your email Notifications from email@example.com and that logo is set inside of the profile of our email address.
Possible workaround is send form emails from your own email address. Inside of this guide you can find how to setup SMTP for a form: https://www.jotform.com/help/244-How-to-Setup-SMTP-for-a-Form
