I want to change the email address on an existing quiz that receives correct/incorrect results from all submissions. (This is not on the form, but the QUIZ). I remember it was there when I initially set up the quiz, but now i don't see the place to adjust it.

You should first go to the Quiz App then select the form and click on "Set Quiz Answers":
You will the customization page where you can set the email recipients now, after making all the changes click on the "Save Quiz" button:

Please confirm do you want to send email notification to multiple email addresses. You can check the below article for doing that:

We had a temporary issue where our pages were not working, that is why the link given by my colleague above is not working, it is fixed now and the link will load fine.
However, that link will not help you since that is to set up multiple recipients for your submissions, and you're currently looking to send the result of the quiz to more than one email recipient.
To do that add the email addresses like this:
Separating each email address with a comma followed by a space, add it in the email recipient while on the Quiz App.
I have just tested it and worked.
