I want to customise the PDF report to either include columns or a table into cells of which I can place the submitted data. Is this possible? Many thanks.

Unfortunately, it is not possible to add tables or any other elements rather than custom images and text to the PDF report.
However, you may customize the layout and display the question in your forms in columns, simply place the mouse cursor on the right-bottom side of the field, you will notice that the corner changes and it means that you can resize it:
This way you may also indeed display the info in your form in multiple columns.
