If I sign up for an account to be paid monthly by credit card, is there a way to setup my account so that I am emailed an invoice each month?
The only details I can find on your website is how to view existing invoices, but I didn't see anything about whether I can elect to have you send me invoices for each payment.

Stripe which is our current payment processor for Credit Card payments will send you the monthly subscription invoice. And yes, you can view it in the Account - Billing page.

OK, but how is it sent? Can it be sent via email? Also, does it have to be sent to the person who is the administrator of the account, or can another person's email information be added to the site for it to be sent to someone other than the account administrator?

It is sent via email to the email address you used in the purchase which is usually your account email address.
You can actually get a copy of your invoices and have it sent manually to someone else https://www.jotform.com/help/329-How-to-Check-Invoices.
