How does jotform storage works

    Would the file upload features by users of the form be able to store the uploaded files on our server or would they still go to the 1TB storage associated with a gold account?

    I suggest you review our user guide about it here : Understanding-Your-Account-Usage-Limits

    For the uploaded file, it will always have a copy of the file first in our server. This mandatory since you were using our service. 

    But if you do not want the file to be stored on our side, you can always delete the uploaded file. Be sure to get your copy first of the file though before you remove them so that you will not loose your data.

    You can also use integration to 3rd party service that host uploaded file like Dropbox, Google Drive, or use your own FTP service.

    So, I we integrate with a 3rd party service, will the file(s) still reside on your server or just naturally flow to our FTP server?

    It will first have a copy on our server then it will also make a copy on your FTP server or to the 3rd party service integration you used.

    You will need to initiate the deletion of the file in the JotForm server.
