The empty field highlighted in the attached image is being shown in the notification email, despite the fact that I have the preferences set to exclude empty fields from the email.
Why? Is it a bug or I have to change settings?
(If it's possible, we could speak better Italian)

I have tested your form and I was able to replicate mentioned issue. After that I made several tests on my cloned form and same issue occurred.
I am not exactly sure what is causing this issue. On my cloned form I have tried to delete that row in Autoresponder email settings and add new one with same values, but that did not resolved mentioned issue. However ll other empty fields are hidden.
On my cloned form I was able to resolve the issue by creating new Autoresponder email.
Please try the same, create new Autoresponder email and test your form. If it issue is resolved with new Autoresponder email you can delete old email.

Yes, I have changed the Autoresponder and now it works fine!
