do you have a way of creating a coupon and having it only able for recipient to print once? Have a client that wants to send out an email via Constant Contact...they want to give a way a free slice of cheesecake but want the recipient to only be able to print out/redeem it once.

You can add a coupon code in the Payment Form and you can also allow the coupon to be used once. Please see this guide: How To Add Coupon Code in the Payment Form.
After the user applies the coupon code and submits your form, you can receive the submission with the code and you can print it. How to View Form Submissions
Have a client that wants to send out an email via Constant Contact.
You can integrate your form to Constant Contact. Please see this guide on How to Integrate Form with Constant Contact.

I don't think this is working...I just want the customer to be able to print out a coupon for free cheesecake, there is no payment. Is there a way to do that?

You may consider using Unique ID widget on the form for generating the coupon code. Please refer to the following guide that can help you with using Unique ID widget.

You may setup an email auto-responder to send the coupon code to the user and integrate ConstantConstact as mentioned in the earlier post.
