Hi! I'm hearing there are issues with the newest Chrome update and that it hinders submissions on Jotform. Is there something being done to combat this? If not, what measures can we take to make sure we're not missing out on submissions?

Thank you for reaching out to us.
Form submissions can be easily viewed on the submission page, however, the best way to verify is through the email history logs on your account and I assume that there's an email notification set up on all of your forms.
For your reference: How-to-View-All-Your-Form-Email-History
If you need to verify if a form is submitted and you didn't receive any notification and the submission is also missing on the submission page the best way to verify is to check the account's history log. In this way, you'll see that there's an actual submission but for some reason, there could be a problem with the email service provider not sending or receiving emails from Jotform.
Then you can always contact us through this forum page if you need assistance on your form or to report a missing submission so that we could investigate it.
