I noticed when people submit my contract they only thing that shows up is where they enter info. The rest of my contract is missing. All that gets submitted to me is the boxes they fill in. Also they are unable to download a copy for their records.

If you're referring to the email notification, please note that text or paragraph fields are not automatically included in the email template. Please update your email notification and include the text in the email as well.

    Here's the guide: How-to-Edit-the-Email-Template-for-Notifications-and-Autoresponders

Also, they are unable to download a copy for their records.

Could you let us know if we can send a test submission to the form to test it from our end?

submissions. I am unable to locate where I add complete text of form to be
    received in my submissions

    Hi @darbylk!

Unfortunately, we are not able to see attachments sent via email. Please follow this guide to post screenshots in our support system: How-to-Post-Screenshots-to-Our-Support-Forum.

In the meantime, it appears that your original PDF is not connected to the online form. Please click on Reupload PDF to re-connect the online form to the original document. I number of features, like Preview PDF and the original PDF attachment to the notification email will start working.

You can also attach the original PDF to the autoresponders which get sent to the person filling out the form. You can enable that option in the Settings tab, simply check the highlighted checkbox:

If you would like to include the actual text fields found on the form itself in the autoresponder or notification emails, you can do that as well! Simply edit the body of the emails to include the appropriate text, here is the guide on how to edit the emails [guide] and here is my screenshot example:
