Hi I want to create a coupon that can only used by each user once. Ie so jot form will recognise that a particular user has used the coupon in a transaction and therefore cannot use it again? Is this possible? Cheers all!

You are able to limit the coupon usage for global usages. However, you cannot limit the usage of coupon for individuals usage from the payment options.
I would like to recommend you to enable the unique submission feature for the form. In this way, you can prevent form respondents from making multiple submissions.
To limit the coupon usage, please create a new coupon from your payment settings and set the "Coupon Limit" as "By number of uses".
To enable the "Unique Submission" feature, please go to your form settings and select the "Check cookies and IP" option for a strict restriction.
Also, you are able to enable the "Unique Question" option for your form. For example, if John Doe has already bought a product with a coupon code and has filled out the email address field with john@doe.com, he cannot send a new submission with the same email address.
